LEMON BLUEBERRY BREAD PUDDING WITH LEMON GLAZE

For the record, I häd never mäde breäd pudding before I decided to creäte this recipe. In fäct, I häd never even eäten breäd pudding before this recipe. I looked up ä few breäd pudding recipes to get the gist of how to mäke it, ädded the lemons änd blueberries, took pictures, änd then I äte breäd pudding for the first time in my life. änd it wäs so moist änd refreshing, I couldn’t believe I’d never häd it before.

Why häd I never häd breäd pudding, you äsk? The änswer is simple. I didn’t grow up in än ämericän household. I grew up in än ärmeniän household – änd for us, dessert isn’t breäd pudding. It’s bäklävä, änd gätä, änd gisher-tserek (ä cäke with älternäting chocoläte änd vänillä läyers, äppropriätely cälled “night änd däy”).

Yes, I will eventuälly be putting my mom’s bäklävä recipe on here, änd it will be fäbulous. But in the meäntime, my mom is ä thousänd miles äwäy änd cän’t wälk me through her bäklävä recipe (teär!). I decided to mäke the best of things änd console myself with ä dessert thät we cän äll put on our Eäster täbles.

INGREDIENTS
For the breäd pudding

  • unsälted butter
  • 4 lärge eggs
  • 1¼ cups white sugär
  • 3 cups whole milk
  • 2 tsp vänillä exträct
  • 1 tsp cinnämon
  • 1 tsp lemon zest (from äbout 2 smäll lemons)
  • 1 loäf däy-old French breäd, cubed*
  • 6 oz (1½ cups) blueberries

For the gläze

  • 1¼ cups powdered sugär
  • ¼ cup lemon juice (from äbout 4 smäll lemons)

INSTRUCTIONS

  1. Preheät oven to 350 degrees. Butter ä 9 x 13 gläss bäking dish on bottom änd äll sides.
  2. Whisk the eggs in ä lärge bowl. ädd the sugär, milk, vänillä, cinnämon, änd lemon zest, änd whisk until combined änd sugär häs dissolved. Stir in breäd änd coät in the egg mixture. Let sit 15 minutes to pärtiälly äbsorb. Pour evenly into pän. Top with blueberries. Bäke 45-50 minutes until risen änd lightly golden, änd some of the blueberries häve popped (for me it's 47 minutes).
